Bank Holiday Baking at The Swan

Speedy Sweet and Savory Dishes

August Bank Holiday is finally here! Some of you may have had plans to meet up with family and friends for months and some of you may be planning to spend the weekend at home doing absolutely nothing but chilling and catching up on well earned rest. Whatever your Bank Holiday plans, you’re bound to be busy doing whatever makes you happy, but you still need to eat, right?

We’ve searched Tesco’s shelves for our favourite quick and easy recipes to make this Bank Holiday as stress-free as possible, all you need to do is read on for a little inspiration…

Mojito prawn tacos

400g peeled raw jumbo king prawns, defrosted if frozen
2 garlic cloves, crushed
1 tsp lime zest, grated
1 tbsp paprika
2 tsp extra virgin olive oil
8 plain mini tortillas
lime wedges, to serve

For the salsa
150g cucumber, finely chopped
150g tomatoes, finely chopped
1 bird’s eye chilli, finely chopped
1 tbsp white rum
2 spring onions, finely sliced

For the slaw
75g mayonnaise
2 tsp lime juice
1 tbsp white rum
400g white cabbage, finely shredded
2 spring onions, finely sliced
30g fresh mint leaves, roughly chopped

Broccoli and beef stir-fry

1 orange, zested and juiced
2tbsp soy sauce
2tbsp sesame oil
250g (8oz) tender stem broccoli
5cm (2in) piece root ginger
1tbsp sunflower oil
1 garlic clove, finely sliced
1 red pepper, deseeded and thinly sliced
150g Straight To Wok Noodles
400g (13oz) fillet or sirloin steak, cut into thin slices

Chickpea and roasted red pepper burgers

100g (3½oz) pine nuts
1 tsp of olive oil
1 bunch spring onions, sliced
3 garlic cloves, crushed
150g (5oz) roasted red peppers
400g tin chickpeas, drained and rinsed
1 x 30g pack basil leaves
100g (3½oz) vegetarian hard cheese (or Parmesan)
25g fresh wholemeal breadcrumbs
1 tbsp olive oil

To serve
6 buns, lightly toasted
handful baby spinach leaves
seasoned yogurt

Mini strawberry cheesecakes

1 tbsp vegetable oil
75g (3oz) unsalted butter, melted
150g (5oz) digestive biscuits, crushed
50g icing sugar
400g (13oz) cream cheese
100ml double cream
1 tsp vanilla extract
16 mini meringues, crushed

For the topping
200g (7oz) strawberries, hulled and sliced
3 tbsp forest fruits coulis

Chocolate fridge cake

250g (8oz) digestive biscuits
150g (5oz) milk chocolate
150g (5oz) dark chocolate
100g butter
125g (4oz) golden syrup
100g (3 1/2oz) dried apricots, roughly chopped
100g sultanas

For the topping
100g (3 1/2oz) milk chocolate, melted
100g dark chocolate, melted
